Home » Wines » Wine MakingEach vineyard block is picked at optimal ripeness and vinified separately. This allows us to choose the right sort of barrels for each block of vines so their individual characters and nuances are reflected.
We only use French oak and always a combination of first- second- and third-fill barrels. We feel this is the best way for the fruit to express itself while at the same time giving the wines a rounded, complex structure.
When it comes to putting the various barrel components together for the final blend, any that don’t meet the standard we set are immediately discarded. This attention to detail at every step of the winemaking process ensures that the wines from Eagles’ Nest are the very best we can produce and are a true reflection of our unique terroir.
